Serendipia Cava Reserva Brut, by the makers of Pago Aylés, the Ramón Reula Family Winery
A collaboration between friends yields the first Cava commercialized by the Ramón Reula Family.
After the Immortalis project, the logical next step for the Ramón Reula Family was to establish a collaboration with friends that own a winery near Valencia and a highly regarded producers of organic Cava.
The resulting wine classified under the category of Cava Guarda Superior is made from organically grown chardonnay and macabeo (viura) grapes in a vineyard planted at 750m above sea level. The vineyard qualified as “Guarda Superior” because of its quality and low yields, is located in the Levante Cava Zone, approximately 65km from the Mediterranean sea near the city of Requena, in the interior of Valencia province. The soil is very poor, mainly composed of clay and lime. Due to its location, the vineyard is under Mediterranean influence with a mainly continental microclimate. This area has remarkable thermal contrasts between day and night, as well as long, cold winters.
The Cava Guarda Superior category has various styles, including the Cava Reserva which requires a minimum ageing of 18 months in bottle before disgorging.
