A bubbly will get you into the holiday spirit despite the lack of snow!

Here is a nice surprise from the Ramón Reula family who are behind the wines of Pago Aylés.
In collaboration with friends that are renowned winegrowers and organic cava producers from the Valencia region, they created their first cava... and not just any cava: a certified organic Cava Guarda Superior Reserva.
Cava is produced using the champenoise method with a second fermentation in the bottle from the addition of yeast and sugar.
The geographical location allowing the production of cava is particular because it is not contiguous and is made up of four regions: Comtats de Barcelona, Ebro Valley, Viñedos de Almendralejo and the Levante zone. It is also from this latter region where the vines producing the viura (macabeo) and the chardonnay which make up the Serendipia Cava Reserva Brut vintage are grown. At this price, it would be a mistake not to get a case !

Quite comparable to excellent champagnes, but at a very reasonable price.

The use of macabeo brings a citrus profile with lots of texture, and hints of pears and apples. Really nice acidity and well balanced.
We already served this in tastings and it was a real hit.

LMT Wines - Kimera Espumoso Ancestral

The December arrival marked the return of the espumoso ancestral rosé and white sparkling wines from Luis Moya. This vintage reflects the many years of experience of the duo behind these wines, wishing to obtain dry pet-nats. With no measurable residual sugar, these are therefore two “bone-dry” wines, but with a very complex aromatic profile. Two exceptional natural juices with only 10 mg/L of free SO2.

What is a "pétillant naturel" wine (pet-nat for short)? This is the ancestral method of producing sparkling wine. This method involves bottling wine that is only partially fermented (approx. 22g/L of sugar) using temperature to stop fermentation in the tanks. Fermentation continues after bottling when the temperature is raised (e.g. 18C) and the CO2 produced during alcoholic fermentation is trapped.
After a few months in the bottle, the gas is absorbed into the wine in the form of bubbles and the pét-nat is ready! Unlike champagne, there is less pressure in a pet-nat (3-4 ATM vs 5-6 ATM), but still enough to have fine bubbles.
