Bastard! Spanish Trousseau ?!?

...oh yes, a real juicy trousseau from Bogegas Bhilar

Following the natural Grenache wines of Luis Moya Tortosa, here's another wine in the same vein: pure juice, natural, easy to drink, a reflection of the Spanish terroir.
|
This is Sasikume, by Bodegas Bhilar. An Éteréa Kripan project, Melanie's portfolio.
|
Made from bastardo (the Spanish name for Trousseau), it's a wine with a high evaporation coefficient! Some might say it's quaffable, or as we say in French: "glou glou". We agree.
|
|
Why Sasikume? It means bastard in Basque... so you get the idea.
|
|
You might know Trousseau, one of the two emblematic red grape varieties of the Jura region (the other is Ploussard or Poulsard, depending on your spelling preference). So, are you surprised to find it in Spain? You shouldn't be.
|
Bastardo was very widespread in Rioja until the phylloxera crisis at the end of the 19th century. Trousseau is mentioned in writings from the Jura region in 1732... but it was already being used in Rioja some 200 years earlier!
|

Sasikume comes from an experimental Trousseau 0.5 hectares vineyard ("El Somo") trained in single Cordon de Royat, planted in 2018 at an altitude of 600 meters.
|
Similar yields of 5,000 kg/ha were obtained in 2023 and 2024.
|
|
The grapes were harvested in mid-September, and whole-clusters placed in a concrete vat where they were gently crushed to initiate natural fermentation with indigenous yeasts. When the density reached 1010 (80-90% fermented), the tank was emptied and pressed, separating the juice from the skins and allowing the remaining liquid to complete the fermentation of the last grams of sugar in concrete tanks. Malolactic fermentation followed immediately.

After a month of aging on fine lees to develop its complexity and texture, the wine was racked and bottled in December without fining or stabilization.
|
Melanie added a touch of SO2 at bottling because she felt there was too much variation between the 2023 bottles.
|
For those interested in analytical chemistry, here are the results for the 2024: 12% alc./vol.
|
Residual sugar: 1.4 g/L SO2: 6 mg/L (!) Titratable acid: 5.28 g/L

A comment on the label...

Melanie started keeping farm animals, including chickens, and she thought of making a chicken-goat hybrid would be a great bastard for the label! We love it.

Finally here! Bhilar blanco 2023
|
A Demeter-certified (biodynamic) wine that reflects the terroir of Rioja Alavesa.
|
|
A blend of 80% Viura and 20% White Garnacha, the destemmed grapes fermented in contact with their skins for 15 days in concrete tanks before pressing. The wine was then aged for 12 months in a combination of 500L vats, foudres, and 225L neutral oak barrels, followed by a further 6 months of aging in concrete tanks before bottling.
